BBQ Pork Quesadillas

Ingredients
- 3 lb. Fully Cooked Pulled Pork
- 18 oz. reduced sodium BBQ sauce
- 1lb. 2 oz. sliced sweet yellow onions
- 1/2 cup olive oil
- 24 multi-grain flour tortillas
- 1 1/2 lb. shredded low fat Cheddar cheese

- Combine pulled pork and BBQ sauce; heat through. Saute onion slices in olive oil until caramelized.
- Spoon 2 oz. pulled pork and .75 oz. onions on one half of tortilla. Top with 1 oz. cheese. Fold tortilla in half to form half moon shape. Grill 2 to 3 minutes on each side on griddle sprayed with butter flavored nonstick cooking spray.
