Ingredients

  • 8 to 10 slices bacon
  • 1 lb pork tenderloin, at room temperature
  • Salt and pepper
  • 1 Tbsp olive oil
  • 2 Tbsp honey or maple syrup 
  • Polenta Cakes (recipe to follow)
  • 2 heads radicchio, charred

Polenta Cakes

  • Olive oil spray
  • 2 cups coarse-or medium-grind polenta (yellow cornmeal) (about 11 ounces)
  • 6 cups chicken broth
  • Kosher Salt and freshly ground black pepper
  • 1/4 cup Parmesan cheese freshly grated
  • 1/4 cup oil

Preparation

Bacon-Wrapped Tenderloin

  1. Preheat oven to 350F
  2. Lay the bacon next to each other on a cutting board, slightly overlapping. The width of the bacon should be enough to wrap the length of the pork.
  3. Season the pork with salt and pepper. Tuck the thin end under so the length of the pork is roughly the same thickness.
  4. Heat the oil in an oven proof skillet over high heat.
  5. Sear the pork on all sides until nicely browned.
  6. Place pork on the bacon. Use a knife to help keep the bacon together and roll the pork up, finishing with the seam side down.
  7. Use the knife to transfer back into the skillet. Drizzle over honey and brush all over.
  8. Roast for 25to 30 minutes (Note 1), basting once or twice with the pan juices, mopping up plenty of the honey pooled at the base of the pork.
  9. Remove from oven and baste again. Let it rest for 5 minutes. Baste once more just before serving.
  10. To serve, cut into thick slices.

Polenta Cakes

  1. Spray a 9×13 pan with olive oil spray. Preheat oven to 400 degrees F.
  2. In a heavy saucepan, whisk together the polenta (yellow cornmeal) and water and place over medium heat. Bring slowly to a boil, whisking often to prevent lumps from forming. Reduce the heat to low and simmer uncovered, stirring occasionally, for just a few minutes until smooth.
  3. Season with salt and black pepper and cheese and stir together. carefully pour into the hot prepared skillet or dish.
  4. Bake for 40 minutes. Allow to cool completely.
  5. Cut into squares, triangles or rounds or really any shape you like.
  6. Heat a nonstick skillet with the oil over high heat. Put 4 cakes in at a time. Cook 2-3 minutes per side or until well browned. Repeat with remaining cakes.
